Chili Bean Nachos
Ingredients
2 cups nacho chips
½ onion
1 clove garlic
½ tin chilli beans
¾ cup tinned tomatoes
½ t coriander
¼ cup grated cheese
1 T sour cream


Method
Heat oil in a large fry pan. Add the chopped onion and garlic, sauté until onion is soft and translucent.

Add the can of chilli beans and tomatoes, and water (1/4 cup) , stir to combine.
Mashes the mixture until 2/3 of the beans is mashed. (use a fork).
Simmer for 15 minutes over a low heat, until the mixture thickens. Add the coriander, and heat through a few minutes more.

This mixture can be piled on top of nacho chips, then topped with cheese.

Return to oven till cheese is melted.
Serve with guacamole or sour cream.
